Description
One of the largest native perennial plants in the region, cowparsnip will tower over all other vegetation, often reaching heights of 5′-8′ tall. It is the largest species of the carrot family in North America. The umbel flower is like an umbrella of tiny white flowers adored by many pollinators such as bees and butterflies. It is ideally suited to a location where it will have plenty of room to grow; cowparsnip gets really tall and also has huge, ornamental leaves. Cowparsnip prefers a rich, moist soil, and is adaptable to irrigated garden conditions, and it can also be grown in moist areas as part of habitat restoration efforts. Cowparsnip is short-lived, but will reseed itself. It is a larval host plant for the anise swallowtail butterfly.
